Chicken Mac and Cheese

2 cups elbow macaroni

1 lb boneless, skinless chicken breasts, diced

3 cups sharp cheddar cheese, shredded

1 cup mozzarella cheese, shredded

1/2 cup grated Parmesan cheese

1/4 cup unsalted butter

1/4 cup all-purpose flour

2 cups whole milk

1 tsp garlic powder

1 tsp onion powder

1/2 tsp paprika

Salt and freshly ground black pepper, to taste

1/2 cup breadcrumbs (optional)

Fresh parsley, chopped (for garnish)

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add the elbow macaroni and cook according to the package instructions until al dente. Drain and set aside.

    Prepare the Chicken: In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced chicken, season with salt, pepper, and half of the paprika, and cook until golden brown and cooked through (about 5-7 minutes). Remove the chicken from the skillet and set aside.

      Make the Cheese Sauce: In the same skillet, melt the butter over medium heat. Whisk in the flour and cook for about 1 minute, until bubbly. Gradually whisk in the milk, ensuring there are no lumps. Continue to whisk until the mixture thickens (about 5-6 minutes).

        Add Spices and Cheese: Stir in the garlic powder, onion powder, and the remaining paprika. Gradually add the sharp cheddar and mozzarella cheese, stirring until melted and smooth. Taste and adjust with salt and pepper as needed.

          Combine Chicken and Pasta: Once the cheese sauce is smooth, fold in the cooked macaroni and chicken until evenly coated.

            Transfer to Baking Dish: Preheat your oven to 350°F (175°C). Transfer the mac and cheese mixture into a greased 9x13-inch baking dish. Sprinkle the top with grated Parmesan cheese and breadcrumbs (if using) for a crunchy topping.

              Bake: Bake in the preheated oven for 20-25 minutes, until the top is golden and bubbly.

                Garnish and Serve: Remove from the oven and let it cool for a few minutes. Garnish with fresh chopped parsley before serving.
