Cheesy Zucchini Casserole

4 medium zucchinis, grated

1 cup sharp cheddar cheese, shredded

1 cup mozzarella cheese, shredded

1/2 cup grated Parmesan cheese

1/2 cup breadcrumbs (preferably whole grain)

1 small onion, finely chopped

3 cloves garlic, minced

3 large eggs

1/2 cup milk

1 teaspoon dried oregano

1 teaspoon salt

1/2 teaspoon black pepper

1/4 teaspoon crushed red pepper flakes (optional)

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Zucchini: Grate the zucchinis using a box grater. Place the grated zucchini in a clean kitchen towel and wring it out to remove excess moisture—this step is essential to prevent the casserole from becoming too watery.

      Sauté the Aromatics: In a skillet over medium heat, add a drizzle of olive oil. Sauté the chopped onion for about 5 minutes, until softened and translucent. Then add the minced garlic and sauté for another 1-2 minutes until fragrant. Remove from heat and let cool slightly.

        Mix the Casserole Base: In a large mixing bowl, combine the grated zucchini, cooked onion and garlic, shredded cheddar and mozzarella cheeses (reserve a handful for topping), grated Parmesan, breadcrumbs, oregano, salt, black pepper, and red pepper flakes if using. Mix well to ensure everything is evenly incorporated.

          Add Eggs and Milk: In a separate bowl, whisk together the eggs and milk until well combined. Pour this mixture into the zucchini and cheese blend. Stir until all the ingredients are well coated.

            Transfer to Baking Dish: Grease a 9x13-inch baking dish with cooking spray or oil. Pour the zucchini mixture into the dish, spreading it out evenly. Sprinkle the reserved mozzarella cheese on top for a melty finish.
