1 cup shredded mozzarella cheese

1 cup shredded sharp cheddar cheese

1 cup frozen mixed vegetables (like bell peppers, corn, and peas)

1 small onion, finely chopped

2 cloves garlic, minced

1 teaspoon ground cumin

½ teaspoon chili powder

Salt and pepper to taste

2 tablespoons olive oil (divided)

Fresh cilantro, chopped (for garnish)

Salsa and sour cream (for serving)

Prep the Veggies: In a medium skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and garlic. Sauté for about 3-5 minutes until the onion becomes translucent.

    Add Mixed Vegetables: Add the frozen mixed vegetables to the skillet along with cumin, chili powder, salt, and pepper. Stir well and cook for another 4-5 minutes until the veggies are heated through. Remove from heat and set aside.
