Cheesy Quinoa and Veggie Casserole

1 cup quinoa, rinsed and drained

2 cups vegetable broth

1 cup shredded cheddar cheese (or your favorite cheese)

1 cup broccoli florets (fresh or frozen)

1 cup bell peppers, diced (any color)

1 cup zucchini, diced

1 small onion, chopped

2 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon smoked paprika

Salt and pepper to taste

1 cup milk (dairy or plant-based)

1 tablespoon olive oil

1/2 cup breadcrumbs (optional for a crunchy topping)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Cook the Quinoa: In a medium saucepan, combine the rinsed quinoa and vegetable broth. Bring to a boil, then reduce the heat, cover, and simmer for 15 minutes, or until the quinoa is fluffy and the liquid is absorbed. Remove from heat.

      Sauté the Vegetables: In a large skillet, heat the olive oil over medium heat. Add the chopped onions and garlic, sautéing until they become translucent (about 3-4 minutes). Add the diced bell peppers, zucchini, and broccoli florets, cooking for an additional 5-7 minutes until the vegetables are just tender. Season with salt, pepper, oregano, and smoked paprika.

        Mix the Ingredients: In a large mixing bowl, combine the cooked quinoa, sautéed vegetable mixture, milk, and half of the shredded cheese. Stir until everything is well incorporated.

          Transfer to Casserole Dish: Pour the quinoa and veggie mixture into a greased 9x13-inch casserole dish. Spread it evenly, and top with the remaining cheese. If desired, sprinkle breadcrumbs over the top for added crunch.

            Bake the Casserole: Cover the dish with aluminum foil and bake in the preheated oven for 20 minutes. Then, uncover and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly, and the casserole is heated through.
