3 medium-sized russet potatoes, peeled and diced

1 cup sour cream

1 cup shredded sharp cheddar cheese

1 cup shredded mozzarella cheese

1 small onion, finely chopped

3 cloves garlic, minced

1 tsp garlic powder

1 tsp onion powder

1/2 tsp smoked paprika

Salt and pepper, to taste

1/2 cup breadcrumbs (optional, for topping)

2 tbsp unsalted butter, melted (optional, for topping)

Fresh chives or parsley, chopped (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Boil the Potatoes: In a large pot, bring salted water to a boil. Add the diced potatoes and cook for about 10-15 minutes, or until fork-tender. Drain and set aside.

      Sauté the Onion: In a skillet over medium heat, add a drizzle of oil. Sauté the chopped onion for about 3-4 minutes until translucent. Add the minced garlic and continue to cook for another minute until fragrant.

        Mix the Ingredients: In a large mixing bowl, combine the boiled potatoes, sautéed onion and garlic, sour cream, cheddar cheese, mozzarella cheese, garlic powder, onion powder, smoked paprika, salt, and pepper. Mix well until all ingredients are evenly coated.

          Transfer to Baking Dish: Pour the mixture into a greased 9x13-inch baking dish, spreading it evenly.

            Prepare Breadcrumb Topping (optional): In a small bowl, combine breadcrumbs with melted butter. Sprinkle the mixture evenly on top of the potatoes for a crunchy topping, if desired.

              Bake: Place the baking dish in the preheated oven and bake for 25-30 minutes, or until the cheese is bubbling and golden brown on top.

                Garnish and Serve: Once done, remove from the oven and let it cool for a few minutes. Garnish with chopped fresh chives or parsley before serving.
