Ingredients

4 large russet potatoes, peeled and thinly sliced

2 cups shredded sharp cheddar cheese

1 cup grated Parmesan cheese

1 cup heavy cream

1 cup whole milk

3 cloves garlic, minced

1 teaspoon fresh thyme leaves (or ½ teaspoon dried thyme)

1 teaspoon onion powder

½ teaspoon smoked paprika

Salt and pepper to taste

4 tablespoons unsalted butter, cut into small pieces

Fresh parsley, chopped, for garnish (optional)

Instructions

Preheat the oven: Preheat your oven to 375°F (190°C).

Prepare a baking dish: Grease a 9x13 inch (or similar size) baking dish with butter or cooking spray.

Mix the creamy base: In a large mixing bowl, combine the heavy cream, whole milk, minced garlic, thyme, onion powder, smoked paprika, salt, and pepper. Whisk it well to combine all the ingredients.

Layer the potatoes: Place half of the sliced potatoes in the bottom of the prepared baking dish, overlapping them slightly. Pour half of the cream mixture over the potatoes, and sprinkle half of the cheddar and Parmesan cheese on top.

Repeat layers: Add the remaining potatoes on top, pour the rest of the cream mixture, and finish with the remaining cheddar and Parmesan cheese. Dot the top with the pieces of butter.

Bake the dish: Cover the baking dish with aluminum foil and bake in the preheated oven for 40 minutes. Remove the foil and bake for an additional 25-30 minutes, or until the potatoes are tender and the top is golden brown and bubbly.

Let it rest: Once done, remove the dish from the oven and let it rest for about 10 minutes. This will help the cheesy goodness set a little.

Serve: Garnish with fresh parsley if desired, and serve warm. Enjoy your Cheesy Potato Paradise!
