1 lb (450g) ground beef

1 cup uncooked long-grain rice

2 cups beef broth (or water)

1 can (10.5 oz) diced tomatoes with green chilies

1 medium onion, chopped

2 cloves garlic, minced

1 cup shredded cheddar cheese (plus more for topping)

1 cup frozen corn (optional)

1 teaspoon paprika

1 teaspoon chili powder

Salt and pepper, to taste

2 tablespoons olive oil

Fresh cilantro or parsley, for garnish (optional)

Instructions
 

Sauté Aromatics: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic, cooking until the onion becomes translucent (about 3-4 minutes).

    Brown the Beef: Add the ground beef to the skillet. Season with salt, pepper, paprika, and chili powder. Cook until the beef is browned and cooked through, breaking it apart with a wooden spoon (about 5-7 minutes).

      Combine Ingredients: Stir in the uncooked rice, beef broth, and the can of diced tomatoes. If using corn, add that too. Mix everything well to ensure the rice is evenly distributed.

        Simmer: Bring the mixture to a boil. Once boiling, reduce the heat to low, cover the skillet, and let it simmer for 20-25 minutes or until the rice is fully cooked and has absorbed the liquid. Stir occasionally to prevent sticking.
