1 can (15 oz) black beans, rinsed and drained

1 can (10 oz) red enchilada sauce

1 cup corn (fresh or frozen)

1 teaspoon cumin

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper, to taste

2 cups shredded cheese (cheddar or Mexican blend)

1/4 cup fresh cilantro, chopped (for garnish)

Sour cream (for serving)

Heat the Oil: In a large skillet over medium heat, add the olive oil. Once hot, add the diced chicken and season with salt, pepper, cumin, garlic powder, and onion powder. Sauté for 5-7 minutes, or until the chicken is cooked through and no longer pink.
