1 cup elbow macaroni

1 can (15 oz) chili (your choice of meat or vegetarian)

1 cup shredded sharp cheddar cheese

1 cup shredded Monterey Jack cheese

1/2 cup milk

2 large eggs

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon smoked paprika

1/4 teaspoon cayenne pepper (optional, for heat)

Salt and pepper to taste

1/2 cup breadcrumbs (optional, for topping)

Fresh cilantro or green onions (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C) and grease a 12-cup muffin tin with non-stick cooking spray or softened butter.

    Cook the Macaroni: In a large pot, bring salted water to a boil. Add in the elbow macaroni and cook according to package instructions until al dente. Drain the macaroni and set aside.

      Prepare the Mixture: In a large mixing bowl, combine the cooked macaroni, canned chili, milk, eggs, garlic powder, onion powder, smoked paprika, cayenne pepper (if using), and half of each cheese (cheddar and Monterey Jack). Mix well until everything is evenly combined. Season with salt and pepper to taste.

        Fill the Muffin Tins: Spoon the mac and chili mixture into each of the muffin tin cups, filling them about 3/4 full.

          Add Toppings: If using, sprinkle breadcrumbs on top of each muffin and then add the remaining cheese on top of the breadcrumbs for extra cheesiness.

            Bake: Place the muffin tin in the preheated oven and bake for 20-25 minutes, or until the tops are golden brown and the cheese is bubbly.

              Cool and Serve: Once baked, let the muffin tins cool for about 5 minutes. Use a butter knife to gently loosen the edges and carefully remove each muffin. Garnish with fresh cilantro or green onions before serving.
