Cheesy Chicken Quesadillas with Avocado Salsa

For the Quesadillas:

2 cups cooked chicken, shredded

1 cup shredded cheddar cheese

1 cup shredded Monterey Jack cheese

1 teaspoon taco seasoning

8 large flour tortillas

2 tablespoons olive oil

1/2 cup red bell pepper, diced

1/2 cup onion, finely chopped

1 jalapeño, finely chopped (optional)

Salt and pepper to taste

For the Avocado Salsa:

2 ripe avocados, diced

1 cup cherry tomatoes, quartered

1/4 cup red onion, finely chopped

1 lime, juiced

1/4 cup cilantro, chopped

Salt and pepper to taste

Instructions
 

Prepare the Chicken Mixture:

    - In a large mixing bowl, combine the shredded chicken with taco seasoning, salt, and pepper. Mix until the chicken is well-coated.

      Sauté the Vegetables:

        - In a skillet over medium heat, add 1 tablespoon of olive oil. Once hot, add the diced red bell pepper, onion, and jalapeño (if using). Sauté for about 5-7 minutes until the vegetables are tender. Remove from heat and set aside.

          Assemble the Quesadillas:

            - Lay out 4 tortillas on a flat surface. Spread the chicken mixture evenly over each tortilla, then top with the sautéed vegetables and a generous amount of both cheeses. Place another tortilla on top of each.

              Cook the Quesadillas:

                - Heat the remaining tablespoon of olive oil in a large skillet over medium heat. Carefully place one or two quesadillas in the skillet (depending on size) and cook for about 3-4 minutes on each side or until the tortillas are golden brown and the cheese is melted. Remove from heat and repeat with remaining quesadillas.

                  Prepare the Avocado Salsa:

                    - In a mixing bowl, combine the diced avocados, cherry tomatoes, red onion, lime juice, and cilantro. Gently toss together and season with salt and pepper to taste.

                      Serve:
