Cheesy Chicken and Broccoli Rice Casserole

2 cups cooked chicken, shredded or diced

2 cups broccoli florets, steamed

1 cup uncooked long-grain white rice

3 cups chicken broth

1 cup shredded cheddar cheese

1 cup cream of chicken soup

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon paprika

Salt and pepper to taste

1 cup breadcrumbs (optional for topping)

2 tablespoons olive oil (if using breadcrumbs)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Prepare Rice: In a medium saucepan, combine the uncooked long-grain rice and chicken broth. Bring to a boil over medium-high heat, then cover and reduce the heat to low. Simmer for about 15-20 minutes or until the rice is tender and the liquid is absorbed. Remove from heat and let it cool slightly.

      Mix Casserole Ingredients: In a large mixing bowl, combine the cooked chicken, steamed broccoli, cooked rice, cream of chicken soup, garlic powder, onion powder, paprika, and half of the shredded cheddar cheese. Season with salt and pepper to taste. Mix everything gently until well combined.

        Transfer to Baking Dish: Spray a 9x13 inch baking dish with non-stick spray (or grease with oil). Pour the chicken and rice mixture into the dish, spreading it evenly.

          Add Cheese: Sprinkle the remaining shredded cheddar cheese evenly over the top of the casserole.

            Prepare Breadcrumbs (Optional): If using breadcrumbs, toss them with olive oil until lightly coated. Sprinkle the breadcrumb mixture over the cheese layer for added crunch and texture.

              Bake: Cover the casserole with aluminum foil (to prevent cheese from browning too quickly) and place it in the preheated oven. Bake for 25-30 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and slightly golden brown.

                Cool & Serve: Once baked, let the casserole cool for about 5 minutes before serving. Garnish with fresh parsley, if desired.
