Cheesy Broccoli and Rice Casserole

2 cups uncooked brown rice

4 cups vegetable broth

4 cups fresh broccoli florets (or 2 cups frozen broccoli)

1 cup shredded sharp cheddar cheese

1 cup shredded mozzarella cheese

1 cup heavy cream (or half-and-half for a lighter version)

1 medium onion, diced

2 cloves garlic, minced

1 teaspoon salt

1/2 teaspoon black pepper

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika (optional for a smoky flavor)

1/2 cup grated Parmesan cheese (for topping)

2 tablespoons olive oil

Fresh parsley, chopped (for garnish)

Instructions
 

Cook the Rice: In a large pot, bring the vegetable broth to a boil. Add the brown rice, reduce heat to low, cover, and let simmer for about 45 minutes, or until the rice is tender and the liquid is absorbed. Remove from heat and set aside.

    Prepare the Broccoli: In a saucepan, bring water to a boil. Add fresh broccoli florets and blanch for 2-3 minutes until bright green and slightly tender. If using frozen broccoli, skip this step and add it directly to the rice. Drain and set aside.

      Sauté Aromatics: In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté for about 3-4 minutes until translucent. Add minced garlic and sauté for another minute until fragrant.

        Combine Ingredients: In a large mixing bowl, combine the cooked rice, sautéed onion and garlic, blanched broccoli, heavy cream, shredded cheddar cheese, mozzarella cheese, salt, pepper, garlic powder, onion powder, and smoked paprika. Stir until well combined.

          Transfer to Casserole Dish: Preheat your oven to 350°F (175°C). Grease a 9x13-inch casserole dish. Spoon the rice and broccoli mixture into the prepared dish, spreading it evenly.

            Add Toppings: Sprinkle the grated Parmesan cheese evenly over the top of the casserole.

              Bake: Place the casserole in the preheated oven and bake for 25-30 minutes, or until the cheese is melted and bubbly.

                Garnish and Serve: Remove from the oven, let it sit for 5-10 minutes, then garnish with fresh parsley before serving.
