2 cups cooked chicken, shredded or chopped

3 cups fresh broccoli florets (or frozen, thawed)

1 cup uncooked rice (white or brown)

3 cups chicken broth

1 cup grated cheddar cheese

1 cup cream of chicken soup (homemade or store-bought)

1 cup milk (preferably whole or 2%)

1 tablespoon olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon paprika

Salt and pepper, to taste

½ cup breadcrumbs (optional, for topping)

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat the Oven: Begin by preheating your oven to 375°F (190°C).

    Prepare the Broccoli: If using fresh broccoli, blanch the florets in boiling water for about 2-3 minutes until vibrant green. Drain and set aside. If using frozen broccoli, ensure it is thawed and drained.

      Combine the Ingredients: In a large mixing bowl, combine the shredded chicken, broccoli, uncooked rice, and cheese (reserve a little cheese for topping). Stir in the cream of chicken soup, milk, garlic powder, onion powder, paprika, salt, and pepper. Mix until everything is well-coated and evenly distributed.

        Add Liquid: Pour in the chicken broth and mix again. The liquid will help cook the rice in the oven.

          Transfer to Casserole Dish: Lightly grease a 9x13 inch casserole dish with olive oil. Pour the mixture into the dish, spreading it out evenly.

            Add Toppings: If using breadcrumbs, sprinkle them evenly over the top of the casserole. Then, add the reserved cheese to give it a nice cheesy crust.

              Bake: Cover the casserole with aluminum foil and bake in the preheated oven for 30 minutes. Then, remove the foil and bake for an additional 15-20 minutes, or until the cheese is bubbly and golden and the rice is fully cooked.

                Garnish and Serve: Once out of the oven, let the casserole sit for about 5 minutes. Garnish with chopped parsley before serving warm.
