Cheesy Broccoli and Cauliflower Casserole

2 cups fresh broccoli florets

2 cups fresh cauliflower florets

1 cup shredded sharp cheddar cheese

1 cup cream of mushroom soup (or homemade)

½ cup milk

½ cup sour cream

1 cup crushed butter crackers (like Ritz)

¼ cup grated Parmesan cheese

1 tsp garlic powder

1 tsp onion powder

½ tsp black pepper

½ tsp salt

½ tsp paprika (for garnish)

2 tbsp olive oil or melted butter

Instructions
 

Preheat the oven: Begin by preheating your oven to 350°F (175°C). Grease a 2-quart casserole dish with a bit of olive oil or cooking spray.

    Blanch the vegetables: In a large pot of boiling salted water, blanch the broccoli and cauliflower florets for 3-4 minutes until they are bright green and slightly tender. Drain and immediately plunge them into an ice bath to stop the cooking process. Drain again and set aside.

      Prepare the cheese mixture: In a large bowl, combine the cream of mushroom soup, milk, sour cream, sharp cheddar cheese, garlic powder, onion powder, black pepper, and salt. Mix well until the ingredients are thoroughly combined.

        Combine veggies and sauce: Add the blanched broccoli and cauliflower to the cheese mixture. Fold gently to coat the vegetables evenly without breaking them apart.

          Layer the mixture in the casserole dish: Pour the cheesy vegetable mixture into the prepared casserole dish, spreading it out evenly.

            Top with cracker crust: In a small bowl, mix the crushed butter crackers with the melted butter (or olive oil) and the grated Parmesan cheese. Sprinkle this mixture evenly over the top of the casserole.

              Bake the casserole: Place the casserole in the preheated oven and bake for 25-30 minutes or until the top is golden brown and the cheese is bubbly.
