Cheesy Beef and Bean Enchiladas in 30 Minutes

1 pound ground beef

1 can (15 oz) black beans, drained and rinsed

1 cup corn kernels (frozen or canned)

1 small onion, finely chopped

2 cloves garlic, minced

1 teaspoon ground cumin

1 teaspoon chili powder

1 cup salsa (your choice of spiciness)

8 flour tortillas (10-inch)

2 cups shredded cheddar cheese

1 cup sour cream (for serving)

Fresh cilantro, chopped (for garnish)

Olive oil

Salt and pepper to taste

Instructions
 

Prep the Ingredients:

    - Start by gathering all your ingredients. Preheat your oven to 375°F (190°C).

      Cook the Beef:

        - In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and minced garlic and sauté until the onion becomes translucent, about 4-5 minutes.

          Season the Beef:

            - Increase the heat to medium-high, add the ground beef to the skillet, breaking it apart with a spatula. Cook until browned, about 5-7 minutes. Drain excess fat.

              Add Beans and Corn:

                - Stir in the black beans, corn, cumin, chili powder, and half of the salsa. Mix well and let cook for an additional 3-4 minutes. Season with salt and pepper to taste.

                  Prepare the Tortillas:

                    - In a separate pan, lightly warm the tortillas one at a time for about 20 seconds on each side. This will make them more pliable and easier to roll.

                      Assemble the Enchiladas:

                        - Spoon approximately 1/4 cup of the beef and bean mixture onto each tortilla. Sprinkle a generous tablespoon of shredded cheese on top of the filling. Roll the tortilla tightly and place seam-side down in a greased baking dish.

                          Top with Salsa and Cheese:

                            - Once all enchiladas are in the baking dish, pour the remaining salsa over the top. Sprinkle the remaining cheese evenly over the enchiladas.

                              Bake:

                                - Place the baking dish in the preheated oven and bake for 15-20 minutes, or until the cheese is melted and bubbly.

                                  Serve:

                                    - Once finished, remove from the oven and let cool for a couple of minutes. Serve the enchiladas hot, topped with sour cream and garnished with fresh cilantro.
