2 cups cooked penne pasta

1 cup ricotta cheese

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

1 large zucchini, diced

1 cup cherry tomatoes, halved

1 red bell pepper, diced

1 cup fresh spinach, chopped

1/2 cup balsamic vinegar

2 tablespoons olive oil

1 teaspoon garlic powder

1/2 teaspoon dried oregano

Salt and pepper, to taste

Fresh basil leaves, for garnish

Instructions
 

Preheat Oven: Preheat your oven to 375°F (190°C).

    Prepare Vegetables: In a large skillet, heat the olive oil over medium heat. Add the zucchini, red bell pepper, and cherry tomatoes. Sauté for about 5-7 minutes until the vegetables start to soften.

      Mix the Cheese: In a bowl, combine ricotta cheese, half of the mozzarella, 1/4 cup of Parmesan cheese, garlic powder, dried oregano, salt, and pepper. Mix well until smooth and creamy.

        Combine Pasta and Veggies: In a large mixing bowl, combine the cooked penne pasta, sautéed vegetables, and fresh spinach. Toss gently to incorporate.

          Add Balsamic Sauce: Pour the balsamic vinegar over the pasta mixture and toss until everything is well coated.

            Assemble the Casserole: In a greased 9x13 inch baking dish, layer the pasta mixture evenly. Spoon the ricotta cheese mixture over the top and spread it gently. Sprinkle the remaining mozzarella and Parmesan cheese on top.

              Bake: Cover the dish with aluminum foil and bake for 25 minutes. Then, remove the foil and bake for an additional 15 minutes, or until the cheese is bubbly and golden brown.

                Garnish and Serve: Once out of the oven, let it rest for 5 minutes. Garnish with fresh basil leaves before serving.
