4 large eggs

2 cups fresh spinach, chopped

1 cup shredded mozzarella cheese

½ cup grated Parmesan cheese

1 small onion, finely diced

2 cloves garlic, minced

1 tablespoon olive oil

Salt and pepper to taste

Optional: Crushed red pepper flakes for a kick

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat the oven: Begin by preheating your oven to 375°F (190°C).

    Sauté the spinach mixture: In a medium skillet, heat the olive oil over medium heat. Add the diced onion and sauté for about 3-4 minutes until translucent. Then, add the minced garlic and chopped spinach. Cook until the spinach is wilted and any excess moisture has evaporated, about 2-3 minutes. Season with salt and pepper. Remove from heat and let cool slightly.

      Combine cheeses: In a large bowl, combine the shredded mozzarella cheese and grated Parmesan cheese. Mix in the spinach mixture until evenly distributed.

        Prepare the nests: Lightly grease a muffin tin with cooking spray or oil. Using your hands, take a portion of the spinach and cheese mixture and press it into the sides of each muffin cup to create a “nest” shape, reserving some of the cheese for topping.

          Add the eggs: Carefully crack one egg into the center of each nest. It’s okay if it slightly overflows; it will set as it bakes. Sprinkle the reserved cheese on top of the eggs.

            Bake: Place the muffin tin in the preheated oven and bake for 15-20 minutes, or until the egg whites are set and the yolks are cooked to your preference.

              Garnish and serve: Once baked, carefully remove the nests from the muffin tin and place them on a serving platter. Garnish with chopped fresh parsley and, if desired, sprinkle with crushed red pepper flakes for added heat.
