1 lb (450g) boneless, skinless chicken breasts

2 tablespoons olive oil

1 teaspoon chili powder

1 teaspoon cumin

1 teaspoon garlic powder

Salt and pepper, to taste

10 oz (280g) tortilla chips

2 cups shredded cheddar cheese

1 cup shredded Monterey Jack cheese

1 cup black beans, rinsed and drained

1 cup corn, drained (canned or frozen)

1 jalapeño, sliced (optional for heat)

1 medium tomato, diced

1/2 cup sliced green onions

1/4 cup fresh cilantro, chopped

1 avocado, diced

1 cup sour cream (for serving)

Salsa (for serving)

Instructions
 

Prepare the Chicken:

    - Preheat your oven to 400°F (200°C).

      - In a bowl, combine olive oil, chili powder, cumin, garlic powder, salt, and pepper. Mix well.

        - Add the chicken breasts to the bowl, ensuring they are coated evenly with the spice mixture.

          - In a skillet over medium heat, cook the chicken for about 6-7 minutes on each side until fully cooked. Alternatively, you can bake the chicken in the oven for about 25-30 minutes or until no longer pink in the center.

            - Once cooked, remove the chicken from the heat and let it rest for a few minutes before shredding it with two forks.

              Assemble the Nachos:

                - On a large baking sheet, spread a layer of tortilla chips.

                  - Evenly distribute the shredded chicken over the chips.

                    - Sprinkle the black beans and corn over the chicken.
