1 large egg yolk

1 cup (226g) unsalted butter, softened

3/4 cup (150g) granulated sugar

3/4 cup (165g) brown sugar, packed

1 large egg

2 teaspoons vanilla extract

2 1/4 cups (280g) all-purpose flour

1 teaspoon baking soda

1/2 teaspoon salt

2 cups (340g) semi-sweet chocolate chips

Instructions
 

Prepare the Cheesecake Filling:

    - In a medium mixing bowl, beat the softened cream cheese, granulated sugar, and vanilla extract together until smooth and creamy.

      - Add the flour and egg yolk, mixing until fully combined. Set aside the mixture in the refrigerator to chill while preparing the cookie dough.

        Make the Cookie Dough:

          - In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.

            - Add the egg and vanilla extract, mixing until well incorporated.

              - In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add dry ingredients to the wet ingredients, mixing just until combined.

                - Fold in the semi-sweet chocolate chips.

                  Assemble the Cookies:
