Ingredients

For the Biscuits:

2 cups all-purpose flour

1 tablespoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

1/4 teaspoon cayenne pepper (optional, for heat)

1/2 cup cold unsalted butter, cut into cubes

1 cup shredded sharp cheddar cheese

3/4 cup buttermilk

For the Chili Filling:

1 pound ground beef (or turkey)

1 small onion, finely chopped

2 cloves garlic, minced

1 can (15 oz) kidney beans, drained and rinsed

1 can (14.5 oz) diced tomatoes (with green chilies, if desired)

1 tablespoon chili powder

1 teaspoon cumin

1/2 teaspoon paprika

Salt and pepper to taste

For Assembly:

Sliced pickles (optional)

Sliced jalapeños (optional)

Fresh cilantro or parsley for garnish

Instructions

Make the Biscuits:

    - Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.

      - In a large mixing bowl, whisk together the flour, baking powder, baking soda, salt, and cayenne pepper.

        - Add the cold butter to the dry ingredients and use a pastry cutter or your fingers to blend until the mixture resembles coarse crumbs.

          - Stir in the shredded cheddar cheese.

            - Pour in the buttermilk and mix just until combined, being careful not to overwork the dough.

              Shape the Biscuits:

                - Turn the dough onto a lightly floured surface. Pat it into a rectangle about 1-inch thick. Cut out biscuits using a round cutter or glass (about 2-3 inches in diameter).

                  - Place the biscuits on the prepared baking sheet, making sure they are close but not touching. Bake for 12-15 minutes or until golden brown.

                    Prepare the Chili Filling:

                      - While the biscuits are baking, heat a large skillet over medium heat. Add the ground beef and cook until browned, breaking it into small pieces.

                        - Add in the chopped onion and minced garlic. Cook until softened, about 3-4 minutes.

                          - Stir in the kidney beans, diced tomatoes, chili powder, cumin, paprika, salt, and pepper. Simmer for 10-15 minutes until heated through and flavors combine.

                            Assemble the Sliders:

                              - Once the biscuits are baked and slightly cooled, slice them in half horizontally.

                                - Spoon a generous amount of chili onto the bottom half of each biscuit. Top with sliced pickles and jalapeños if desired.

                                  - Place the top half of the biscuit back on. Add fresh cilantro or parsley for garnish.

                                    Serve and Enjoy:

                                      - Serve your Cheddar Chili Biscuit Sliders warm, with extra chili on the side if desired. Pair them with a refreshing drink and enjoy the spicy, cheesy goodness!
