1 ½ cups all-purpose flour

1 tsp baking powder

½ tsp baking soda

¼ tsp salt

½ cup shredded cheddar cheese

¼ cup crumbled feta cheese

½ cup diced cooked ham

¼ cup sliced salami, chopped

¼ cup chopped green olives

2 large eggs

1 cup buttermilk

¼ cup unsalted butter, melted

1 tsp Dijon mustard

Freshly cracked black pepper, to taste

Fresh herbs (like rosemary or thyme), for garnish

Preheat the Oven: Preheat your oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners or grease it well with cooking spray.

    Mix Dry Ingredients: In a large bowl, whisk together the flour, baking powder, baking soda, and salt.

      Add Cheeses and Meats: Fold in the shredded cheddar, crumbled feta, diced ham, chopped salami, and sliced olives into the dry ingredients, ensuring an even distribution.

        Combine Wet Ingredients: In another bowl, beat the eggs. Add the buttermilk, melted butter, and Dijon mustard, mixing until well combined.

          Combine Wet and Dry Mixtures: Pour the wet ingredients into the dry ingredients, folding gently until just combined. Be careful not to overmix; it’s okay if there are a few lumps.

            Fill Muffin Tin: Spoon the batter into the prepared muffin tin, filling each cup about ¾ full.

              Season and Garnish: Sprinkle freshly cracked black pepper and chopped fresh herbs on top of each muffin.

                Bake: Bake in the preheated oven for 20-25 minutes, or until the muffins are golden brown and a toothpick inserted into the center comes out clean.
