For the crust:

1 ½ cups graham cracker crumbs

½ cup unsalted butter, melted

¼ cup granulated sugar

¼ teaspoon salt

For the cheesecake filling:

16 oz (2 packages) cream cheese, softened

¾ cup granulated sugar

2 large eggs

1 teaspoon vanilla extract

½ cup sour cream

¼ cup all-purpose flour

For the caramel sauce:

1 cup granulated sugar

6 tablespoons unsalted butter

½ cup heavy cream

1 teaspoon sea salt (more for garnish, optional)

Instructions
 

Prepare the crust: Preheat the oven to 325°F (160°C). In a mixing bowl, combine the graham cracker crumbs, melted butter, sugar, and salt. Mix until the crumbs are well coated and resemble wet sand. Press the mixture evenly into the bottom of a 9x9 inch baking dish. Bake for 8-10 minutes until lightly golden, then remove from the oven and let cool.

    Make the cheesecake filling: In a large mixing bowl, beat the softened cream cheese using an electric mixer until smooth and creamy. Gradually add the sugar and mix until combined. Add the eggs, one at a time, mixing well after each addition. Stir in the vanilla extract, sour cream, and flour. Continue mixing until the mixture is smooth and well incorporated.

      Assemble the cheesecake layer: Pour the cheesecake filling over the cooled crust, smoothing it out evenly. Bake in the preheated oven for about 30-35 minutes, or until the edges are set but the center still slightly jiggles. Remove from the oven and let cool at room temperature, then refrigerate for at least 2 hours, or until fully chilled.

        Prepare the caramel sauce: In a medium saucepan over medium heat, melt the sugar until it becomes a golden amber color, swirling occasionally (do not stir). When melted, add the butter and stir until it melts completely. Slowly pour in the heavy cream while stirring continuously. Be careful, as it may bubble vigorously. Once fully combined, remove from heat and add the sea salt. Let cool to thicken slightly.

          Assemble the bars: Drizzle the cooled caramel sauce over the chilled cheesecake. Use a knife or spatula to create swirls in the topping if desired. For an added touch, sprinkle a little extra sea salt on top of the caramel.
