Cajun Shrimp and Grits Casserole

1 cup grits (stone-ground preferred)

4 cups water or chicken broth

1 cup shredded sharp cheddar cheese

1 lb large shrimp, peeled and deveined

4 slices bacon, chopped

1 medium onion, diced

1 red bell pepper, diced

2 cloves garlic, minced

1 cup heavy cream

2 teaspoons Cajun seasoning

½ teaspoon smoked paprika

¼ teaspoon cayenne pepper (adjust to taste)

Salt and pepper to taste

2 green onions, sliced (for garnish)

1 tablespoon olive oil

Instructions
 

Cook the Grits: In a large pot, bring the water (or chicken broth) to a boil. Gradually whisk in the grits, reducing the heat to low. Stir frequently until the grits are thickened and creamy (about 20-25 minutes). Remove from heat and stir in half of the cheese, salt, and pepper. Set aside.

    Prepare the Sauteed Shrimp and Vegetables: In a large skillet, cook the chopped bacon over medium heat until crispy. Remove the bacon with a slotted spoon and set aside, leaving the drippings in the pan. Add the olive oil to the skillet if needed. Sauté the diced onion and red bell pepper until softened (about 5 minutes). Add minced garlic and cook for another minute.

      Cook the Shrimp: Add the shrimp to the skillet along with the Cajun seasoning, smoked paprika, cayenne pepper, and the reserved bacon. Cook for 3-4 minutes, until the shrimp are pink and opaque. Remove from heat.

        Combine Ingredients: In a large mixing bowl, combine the cooked grits, sautéed shrimp mixture, and heavy cream. Stir until everything is well combined and creamy.

          Assemble the Casserole: Preheat your oven to 350°F (175°C). Grease a 9x13 inch baking dish. Pour the grits and shrimp mixture into the dish, spreading it evenly. Top with the remaining cheese.

            Bake: Place the casserole in the preheated oven and bake for 25-30 minutes until bubbly and golden on top.
