4 medium-sized russet potatoes

4 tablespoons unsalted butter, melted

4 cloves garlic, minced

2 tablespoons fresh rosemary, finely chopped

1 teaspoon sea salt

½ teaspoon black pepper

1 tablespoon olive oil

Preheat the oven: Preheat your oven to 425°F (220°C).

    Prep the potatoes: Wash and scrub the russet potatoes thoroughly. Pat them dry with a paper towel. Place a potato on a cutting board and make vertical cuts every 1/4 inch, slicing almost but not all the way through, leaving about 1/4 inch at the bottom intact. Repeat with the remaining potatoes.

      Combine the butter mixture: In a small bowl, combine the melted butter, minced garlic, chopped rosemary, and thyme, along with the sea salt and black pepper. Stir well to combine.

        Brush the mixture: Place the prepared potatoes on a baking sheet lined with parchment paper. Gently fan out the cuts on each potato, then brush the garlic herb butter mixture generously over each potato, ensuring that the mixture seeps into the cuts.

          Drizzle with olive oil: Drizzle the olive oil over the potatoes, adding a little extra flavor and helping them crisp up in the oven.
