Buttery Caramel Pecan Bread Pudding

8 cups of day-old brioche or challah bread, cubed

1 cup of pecans, chopped

½ cup of unsalted butter, melted

1 cup of granulated sugar

1 cup of packed brown sugar

4 large eggs

2 cups of half-and-half

1 tablespoon of vanilla extract

1 teaspoon of ground cinnamon

½ teaspoon of salt

1 cup of caramel sauce (store-bought or homemade)

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a 9x13-inch baking dish with butter or cooking spray.

    Prepare the Bread: In a large mixing bowl, toss the cubed brioche or challah with the chopped pecans. Set aside.

      Mix Wet Ingredients: In another bowl, whisk together the melted butter, granulated sugar, brown sugar, and eggs until smooth. Gradually mix in the half-and-half, vanilla extract, cinnamon, and salt until fully blended.

        Combine Ingredients: Pour the wet mixture over the bread and pecan mixture. Gently stir to ensure all the bread cubes are coated and soaking up the liquid. Allow the mixture to sit for about 15 minutes.

          Add Caramel: Drizzle half of the caramel sauce over the soaked bread mixture. Gently fold it in, being careful not to break up the bread too much.

            Transfer to Baking Dish: Pour the entire mixture into the prepared baking dish and spread it out evenly.

              Bake: Bake in the preheated oven for 45-50 minutes, or until the top is golden brown and a knife inserted in the center comes out clean.

                Cool and Serve: Remove the bread pudding from the oven and let it cool for about 10-15 minutes. Drizzle the remaining caramel sauce over the top before serving.
