Ingredients

4 medium sweet potatoes

2 cups cooked shredded chicken (rotisserie chicken works great)

½ cup buffalo sauce (adjust to taste)

½ cup cream cheese, softened

1 cup shredded cheddar cheese

¼ cup green onions, chopped

½ cup celery, finely chopped

1 tablespoon olive oil

Salt and pepper to taste

Optional toppings: blue cheese crumbles, additional green onions, avocado slices

Instructions

Preheat the Oven: Begin by preheating your oven to 400°F (200°C).

Bake the Sweet Potatoes: Wash and pierce the sweet potatoes several times with a fork. Place them on a baking sheet and bake for 45-60 minutes, or until tender.

Prepare the Chicken Mixture: In a medium bowl, combine the shredded chicken, buffalo sauce, cream cheese, half of the cheddar cheese, chopped green onions, and celery. Mix well until everything is fully combined. Season with salt and pepper as needed.

Assemble the Stuffed Potatoes: Once the sweet potatoes are cooked and cool enough to handle, slice them open lengthwise (do not cut all the way through). Fluff the insides slightly with a fork to create space for the filling.

Stuff the Potatoes: Spoon the buffalo chicken mixture generously into each sweet potato. Top with the remaining cheddar cheese.

Bake the Stuffed Potatoes: Return the stuffed sweet potatoes to the oven and bake for an additional 15-20 minutes, or until the cheese is melted and bubbly.

Garnish and Serve: Remove the sweet potatoes from the oven and let them cool slightly. Top with optional blue cheese, extra green onions, or avocado slices if desired. Serve hot and enjoy your delicious Buffalo Chicken Stuffed Sweet Potatoes!
