Buffalo Chicken Egg Rolls

Ingredients
  

2 cups cooked and shredded chicken

1/2 cup buffalo sauce (adjust for spice preference)

1 cup shredded cheddar cheese

1/2 cup cream cheese, softened

1/4 cup green onions, finely chopped

12 egg roll wrappers

Vegetable oil, for frying

Ranch or blue cheese dressing, for dipping (optional)

Instructions
 

Prepare the Filling: In a mixing bowl, combine the shredded chicken, buffalo sauce, cheddar cheese, cream cheese, and green onions. Mix until all ingredients are well combined and creamy.

    Assemble the Egg Rolls: Lay an egg roll wrapper on a clean surface with one corner facing you (like a diamond). Place about 2 tablespoons of the chicken mixture in the center of the wrapper. Carefully fold the bottom corner over the filling, then fold in the sides. Roll tightly towards the top corner, sealing the edge with a little water.

      Heat the Oil: In a large skillet or deep fryer, heat about 2 inches of vegetable oil to 350°F (175°C).

        Fry the Egg Rolls: Once the oil is hot, carefully place a few egg rolls in the oil at a time (do not overcrowd). Fry for about 3-4 minutes on each side or until they are golden brown and crispy. Use tongs to turn them for even cooking.

          Drain Excess Oil: Remove the cooked egg rolls and place them on a plate lined with paper towels to absorb excess oil.
