2 cups penne pasta

1 lb boneless, skinless chicken breasts, diced

2 cups cherry tomatoes, halved

1 cup fresh basil, chopped

2 cloves garlic, minced

1 cup mozzarella cheese, shredded

1/4 cup balsamic vinegar

1/4 cup extra virgin olive oil

Salt and pepper, to taste

1/2 tsp red pepper flakes (optional)

Fresh basil leaves for garnish

Cook the Pasta: In a large pot of boiling salted water, cook the penne pasta according to package instructions until al dente. Drain and set aside.

    Sauté the Chicken: In a large skillet over medium heat, drizzle with olive oil. Season the diced chicken breasts with salt, pepper, and red pepper flakes. Add them to the skillet and cook for about 5-7 minutes, or until the chicken is golden brown and cooked through. Remove from the skillet and set aside.

      Prepare the Bruschetta Topping: In the same skillet, add a bit more olive oil if needed. Sauté the minced garlic for about 1 minute until fragrant. Then, add in the halved cherry tomatoes. Cook for about 3-4 minutes until they start to soften.

        Combine Ingredients: Add the cooked chicken back into the skillet with the tomatoes. Stir in the balsamic vinegar and fresh chopped basil. Let this mixture simmer for another 2-3 minutes to combine flavors.

          Mix with Pasta: Add the drained penne pasta to the skillet and toss everything together until the pasta is well coated with the tomato, chicken, and basil mixture. Adjust seasoning with salt and pepper if necessary.

            Add Cheese: Sprinkle shredded mozzarella cheese over the top and cover the skillet for a few minutes until the cheese melts.
