1 can (5oz) tuna, packed in water, drained and flaked

1 cup fresh blueberries, rinsed and drained

1/2 cup Greek yogurt (plain)

1 tablespoon Dijon mustard

1 tablespoon honey or maple syrup

1 tablespoon lemon juice

1/4 cup red onion, diced

1/4 cup celery, diced

1/2 teaspoon salt

1/4 teaspoon black pepper

4 cups mixed greens (arugula, spinach, or lettuce)

1/4 cup walnuts or pecans, roughly chopped (optional)

Feta cheese, crumbled (optional, for garnish)

Instructions
 

In a medium mixing bowl, combine the drained tuna, Greek yogurt, Dijon mustard, honey or maple syrup, and lemon juice. Mix well until all ingredients are thoroughly incorporated.

    Add the diced red onion, diced celery, salt, and black pepper to the tuna mixture. Gently fold in the fresh blueberries to retain their shape while ensuring they're well-distributed.

      Prepare your serving bowls by placing a generous handful of mixed greens at the bottom of each bowl.
