Blackberry Balsamic Glazed Pork

Ingredients
  

1.5 lbs pork tenderloin

1 cup fresh blackberries (plus extra for garnish)

1/2 cup balsamic vinegar

1/2 cup chicken broth

2 tablespoons honey

2 cloves garlic, minced

1 tablespoon olive oil

1 teaspoon fresh thyme (or 1/2 teaspoon dried thyme)

Salt and pepper to taste

Optional: fresh basil for garnish

Prepare the Marinade: In a medium bowl, combine the blackberries, balsamic vinegar, chicken broth, honey, minced garlic, thyme, salt, and pepper. Mash the blackberries slightly with a fork to release their juices.

    Marinate the Pork: Place the pork tenderloin in a resealable plastic bag or a shallow dish and pour the blackberry marinade over it. Seal the bag or cover the dish and refrigerate for at least 1 hour, or preferably overnight for deeper flavor.

      Preheat the Oven: When ready to cook, preheat your oven to 400°F (200°C).

        Sear the Pork: Remove the pork from the marinade and reserve the marinade for later use. In a large oven-safe skillet, heat the olive oil over medium-high heat. Sear the pork tenderloin on all sides until it's browned, about 3-4 minutes per side.

          Glaze the Pork: Pour the reserved marinade over the seared pork. Transfer the skillet to the preheated oven and roast for about 20-25 minutes, or until the internal temperature of the pork reaches 145°F (63°C).

            Create the Glaze: Once the pork is cooked, remove it from the oven and transfer the pork to a cutting board. Place the skillet with the marinade back on the stovetop over medium heat, and simmer for about 5-7 minutes, or until the sauce has thickened slightly.

              Serve: Slice the pork tenderloin into medallions and drizzle the blackberry balsamic glaze over the top. Garnish with fresh blackberries and basil if desired.
