2 cups rice flour

1 cup coconut milk

1/2 cup granulated sugar

1/4 cup unsalted butter, melted (plus extra for greasing)

1 teaspoon baking powder

1/2 teaspoon salt

2 large eggs

1 cup grated fresh coconut (or desiccated coconut)

1/2 cup cheese (Edam or any melting cheese), grated

2-3 banana leaves (optional, for lining the pans)

Tall, warm water for steaming

Instructions
 

Prep the Baking Dish: If using banana leaves, soak them in warm water for about 10 minutes to soften. Line a round baking dish (usually 8-10 inches) with the leaves, leaving some overhang. Grease the leaves with butter to prevent sticking.

    Prepare the Batter: In a large mixing bowl, combine the rice flour, baking powder, and salt. In another bowl, whisk together the coconut milk, sugar, melted butter, and eggs until well combined. Gradually mix the wet ingredients into the dry ingredients, stirring until no lumps remain. Fold in the grated coconut.

      Add to the Pan: Pour half of the batter into the prepared baking dish, spreading it evenly. Then sprinkle half of the grated cheese over the batter. Pour the remaining batter on top, followed by the rest of the cheese.

        Set Up for Steaming: Fill a large steamer pot with water (enough to steam but not touch the batter). Bring the water to a boil, then reduce to a simmer. Place the baking dish into the steamer, cover with a lid, and steam for about 30-40 minutes, or until a toothpick inserted into the center comes out clean.

          Finish and Serve: Once cooked, remove the bibingka from the steamer and allow it to cool for a few minutes. You can optionally brush the top with a little butter for an added shine. Slice into wedges and serve warm, topped with extra grated coconut or cheese if desired.
