Ingredients

3 medium zucchinis, sliced into half-moons

2 tablespoons olive oil

1 teaspoon garlic, minced

1/2 teaspoon red pepper flakes (adjust for spice preference)

Salt and pepper to taste

1/4 cup grated Parmesan cheese (optional)

2 tablespoons fresh basil, chopped (or 1 teaspoon dried basil)

Zest of 1 lemon

Juice of 1/2 lemon

Instructions

Prepare the Zucchini: Wash the zucchinis thoroughly and slice them into half-moon shapes, keeping the slices about 1/4 inch thick to ensure even cooking.

Heat the Pan: In a large skillet, heat the olive oil over medium heat. Swirl the oil to coat the bottom of the pan.

Sauté the Garlic: Add the minced garlic to the heated oil and sauté for about 30 seconds, just until fragrant. Be careful not to let it burn.

Cook the Zucchini: Add the sliced zucchinis to the skillet. Sprinkle in the red pepper flakes, salt, and pepper. Cook, stirring occasionally, for about 5-7 minutes or until the zucchini is tender but still slightly crisp.

Add Fresh Flavors: Once the zucchini is cooked to your liking, remove the skillet from heat. Stir in the chopped basil, lemon zest, and lemon juice to brighten the dish.

Cheesy Finish (Optional): If using, sprinkle the grated Parmesan cheese over the zucchini while it’s still warm, allowing it to melt slightly.

Serve: Transfer the sautéed zucchini to a serving dish, garnishing with a few extra basil leaves if desired. Serve immediately as a side dish or over grains for a delicious vegetarian option.
