1 lb beef sirloin, thinly sliced

1 medium onion, finely chopped

2 cloves garlic, minced

8 oz mushrooms, sliced

1 tablespoon olive oil

2 tablespoons butter

1 tablespoon all-purpose flour

1 cup beef broth

1 tablespoon Worcestershire sauce

1 tablespoon Dijon mustard

1 cup sour cream

Salt and pepper, to taste

8 oz egg noodles

Fresh parsley, chopped (for garnish)

Cook the Noodles: In a large pot, bring salted water to a boil. Add the egg noodles and cook according to package instructions until al dente. Drain and set aside.

    Sear the Beef: In a large skillet over medium-high heat, add olive oil. Once hot, add the thinly sliced beef sirloin in batches, searing for about 2-3 minutes until browned on the outside. Remove the beef from the skillet and set aside.

      Sauté the Aromatics: In the same skillet, reduce heat to medium, and add butter. Once melted, add the chopped onion and sauté until translucent, about 5 minutes. Stir in the garlic and sliced mushrooms, cooking for another 5 minutes until mushrooms are browned and tender.

        Create the Sauce: Sprinkle flour over the mushroom mixture, stirring well to combine. Gradually pour in the beef broth, stirring constantly to avoid lumps. Add Worcestershire sauce and Dijon mustard. Bring to a gentle simmer, allowing the sauce to thicken (about 3-5 minutes).
