1 pound beef sirloin, thinly sliced

2 tablespoons olive oil

1 medium onion, finely chopped

2 cloves garlic, minced

8 ounces mushrooms, sliced (button or cremini)

1 tablespoon all-purpose flour

1 cup beef broth

1 tablespoon Worcestershire sauce

1 teaspoon Dijon mustard

½ cup sour cream

Salt and pepper to taste

2 tablespoons fresh parsley, chopped (for garnish)

12 ounces egg noodles (or pasta of choice)

Instructions
 

Cook Noodles: In a large pot, bring salted water to a boil. Add the egg noodles and cook according to package instructions until al dente. Drain and set aside, reserving a little pasta water for later if needed.

    Sear the Beef: In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the sliced beef in a single layer, season with salt and pepper, and sear for about 2-3 minutes on each side until browned. Remove the beef from the skillet and set aside.

      Sauté Onions and Mushrooms: In the same skillet, add the remaining tablespoon of olive oil. Add the chopped onion and cook for about 3-4 minutes until translucent. Stir in the minced garlic and sliced mushrooms, cooking until the mushrooms are soft and have released their juices, about 5-6 minutes.

        Create the Sauce: Sprinkle the flour over the mushroom mixture and stir well to combine, cooking for an additional minute. Gradually pour in the beef broth, stirring constantly to avoid lumps. Add the Worcestershire sauce and Dijon mustard, bringing the mixture to a simmer.

          Combine Ingredients: Reduce the heat to low and return the seared beef to the skillet. Stir in the sour cream, mixing until well combined and heated through. If the sauce is too thick, add a splash of reserved pasta water to reach your desired consistency. Adjust seasoning with salt and pepper as needed.
