Beef Lettuce Wraps with Mango Glaze

Ingredients
  

1 lb ground beef (preferably 80/20 for best flavor)

1 cup finely chopped bell peppers (mix of red and yellow)

1/2 cup shredded carrots

3 green onions, chopped

2 cloves garlic, minced

1 tsp fresh ginger, grated

2 tbsp soy sauce

1 tbsp oyster sauce

1 tbsp sesame oil

Salt and pepper, to taste

1 head of butter lettuce or Romaine lettuce, leaves separated

For Mango Glaze:

1 ripe mango, peeled and diced

2 tbsp honey or agave syrup

1 tbsp lime juice

1 tbsp soy sauce

1 tsp cornstarch mixed with 1 tbsp water (to thicken)

Instructions
 

Prepare the Mango Glaze: In a small saucepan, combine the diced mango, honey, lime juice, and soy sauce. Cook over medium heat until the mango softens, about 3-4 minutes. Use a fork to mash the mixture slightly to release more juices. Stir in the cornstarch mixture and cook until the glaze thickens (another 2-3 minutes). Remove from heat and set aside.

    Cook the Beef Mixture: In a large skillet, heat the sesame oil over medium-high heat. Add minced garlic and grated ginger, sauté for about 30 seconds until fragrant. Add the ground beef, breaking it apart with a wooden spoon. Cook until browned, about 5-7 minutes.

      Add Vegetables: Stir in the chopped bell peppers and shredded carrots. Cook for an additional 3-4 minutes until the vegetables have softened. Season with soy sauce, oyster sauce, salt, and pepper. Mix well and remove from heat.

        Assemble Wraps: To serve, place a spoonful of the beef mixture into a lettuce leaf. Top with chopped green onions and drizzle a generous amount of mango glaze over it.
