Beef & Cheese Lasagna Roll-Ups

9 lasagna noodles

1 pound ground beef

1 small onion, diced

2 cloves garlic, minced

1 cup ricotta cheese

1 large egg

2 cups shredded mozzarella cheese (divided)

1/2 cup grated Parmesan cheese

2 cups marinara sauce (store-bought or homemade)

1 teaspoon dried oregano

1 teaspoon dried basil

Salt and pepper to taste

Fresh basil for garnish (optional)

Instructions
 

Cook the Lasagna Noodles: Bring a large pot of salted water to a boil. Add the lasagna noodles and cook according to package instructions until al dente. Drain and lay the noodles flat on a clean kitchen towel or parchment paper to cool.

    Prepare the Beef Filling: In a large skillet, heat a drizzle of olive oil over medium heat. Add diced onion and minced garlic, sautéing until the onion is translucent. Add the ground beef, breaking it up with a spatula, and cook until browned. Season with salt, pepper, oregano, and basil. Drain any excess fat if needed, then remove from heat and allow to cool slightly.

      Mix the Cheese Filling: In a medium bowl, combine ricotta cheese, 1.5 cups of shredded mozzarella cheese, grated Parmesan cheese, egg, and a pinch of salt and pepper. Mix well until combined.

        Assemble the Roll-Ups: Preheat your oven to 375°F (190°C). Spread 1 cup of marinara sauce evenly across the bottom of a baking dish. To assemble each roll-up, take a cooked lasagna noodle, spread a layer of the cheese mixture along the length of the noodle, and then add a spoonful of the beef mixture. Roll the noodle tightly from one end to the other and place seam-side down in the baking dish. Repeat with the remaining noodles.

          Top and Bake: Once all the roll-ups are in the dish, pour the remaining marinara sauce over the top. Sprinkle the remaining mozzarella cheese evenly across the dish. Cover with aluminum foil, making sure the foil doesn’t touch the cheese. Bake for 25 minutes, then remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden.

            Serve: Remove from the oven and let it rest for 10 minutes. Garnish with fresh basil if desired. Cut into portions and serve hot.
