Beef and Broccoli Stir-Fry with Rice Noodles

8 oz rice noodles

1 lb flank steak, thinly sliced against the grain

2 cups fresh broccoli florets

1 bell pepper, thinly sliced (any color)

3 cloves garlic, minced

1-inch piece of ginger, minced

3 tablespoons soy sauce (low sodium)

2 tablespoons oyster sauce

1 tablespoon cornstarch

2 tablespoons vegetable oil (divided)

1 tablespoon sesame oil

1 tablespoon rice vinegar

1 teaspoon sugar

Salt and pepper to taste

2 green onions, chopped (for garnish)

Sesame seeds (for garnish)

Instructions
 

Prepare the Noodles: In a large pot of boiling water, cook the rice noodles according to package instructions until al dente. Drain, rinse under cold water, and set aside.

    Marinate the Beef: In a bowl, combine the thinly sliced flank steak with 1 tablespoon of soy sauce, cornstarch, and a pinch of salt and pepper. Let it marinate for at least 15 minutes.

      Make the Stir-Fry Sauce: In a small bowl, mix together the remaining 2 tablespoons of soy sauce, oyster sauce, sesame oil, rice vinegar, and sugar. Set aside.

        Cook the Beef: Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the marinated beef in a single layer and stir-fry until browned, about 2-3 minutes. Remove the beef from the skillet and set aside.

          Stir-Fry the Vegetables: In the same skillet, add the remaining tablespoon of vegetable oil. Add the minced garlic and ginger, stirring for about 30 seconds until fragrant. Then add the broccoli and bell pepper. Stir-fry for 3-4 minutes until the vegetables are tender but still crisp.

            Combine Ingredients: Return the cooked beef to the skillet with the vegetables. Pour in the prepared stir-fry sauce and toss everything together. Cook for an additional 2 minutes to heat through, allowing the flavors to meld.

              Toss with Noodles: Add the cooked rice noodles to the skillet and gently toss the noodles with the beef and broccoli until everything is combined and heated through. Adjust seasoning with more soy sauce, salt, or pepper if necessary.
