2 large flatbreads (store-bought or homemade)

1 cup cooked chicken, shredded (can use rotisserie chicken)

1/2 cup BBQ sauce (choose your favorite)

1/2 cup ranch dressing

1 cup shredded mozzarella cheese

1/2 cup sharp cheddar cheese, shredded

1/2 red onion, thinly sliced

1/2 cup corn (frozen and thawed or canned)

1/2 red bell pepper, diced

1 tablespoon olive oil

Fresh cilantro or parsley, for garnish (optional)

Salt and pepper to taste

Preheat the Oven: Start by preheating your oven to 400°F (200°C). If you have a pizza stone, place it in the oven while it preheats for an extra crispy flatbread.

    Prepare the Chicken: In a mixing bowl, combine the shredded chicken with 1/4 cup of BBQ sauce. Mix well until the chicken is coated. Season with salt and pepper to taste.

      Prepare the Flatbread: Lay the flatbreads on a baking sheet lined with parchment paper. Drizzle them with olive oil and spread 1/4 cup of ranch dressing evenly over each flatbread leaving a small border around the edges.

        Assemble the Flatbreads:

          - Distribute the BBQ chicken mixture evenly over the ranch-dressed flatbreads.

            - Sprinkle the shredded mozzarella and cheddar cheeses generously on top of the chicken.

              - Evenly distribute the red onion slices, corn, and diced red bell pepper over the cheese.

                Bake: Place the assembled flatbreads in the preheated oven (or on the pizza stone) and bake for about 10-15 minutes, or until the edges are golden and the cheese is melted and bubbly.
