BBQ Chicken Stuffed Sweet Potatoes

4 medium sweet potatoes

2 cups shredded cooked chicken (rotisserie chicken works well)

1 cup BBQ sauce (your favorite brand or homemade)

1/2 cup corn kernels (fresh, frozen, or canned)

1/2 cup black beans, rinsed and drained

1 cup shredded cheddar cheese

1/4 cup green onions, chopped (for garnish)

1/4 cup fresh cilantro, chopped (for garnish)

Salt and pepper to taste

Olive oil (for drizzling)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare Sweet Potatoes: Wash the sweet potatoes thoroughly and pat them dry. Prick each sweet potato a few times with a fork. Drizzle a bit of olive oil over them and sprinkle with salt.

      Bake Sweet Potatoes: Place the sweet potatoes on a baking sheet and bake in the preheated oven for about 45-60 minutes, or until they are tender and can be easily pierced with a fork.

        Mix the Filling: In a medium bowl, combine the shredded chicken, BBQ sauce, corn, black beans, and half of the shredded cheddar cheese. Mix well until everything is coated in the BBQ sauce. Season with salt and pepper to taste.

          Stuff the Potatoes: Once the sweet potatoes are done, remove them from the oven and let them cool slightly. Slice each sweet potato lengthwise and gently mash the insides with a fork. Spoon the BBQ chicken mixture generously into each sweet potato.

            Top with Cheese: Sprinkle the remaining shredded cheddar cheese on top of the stuffed sweet potatoes.

              Broil: Return the stuffed sweet potatoes to the oven and broil on high for about 3-5 minutes, or until the cheese is melted and bubbly.
