BBQ Chicken Flatbread Pizza

2 flatbreads (store-bought or homemade)

1 cup cooked chicken, shredded

1/2 cup BBQ sauce (your favorite brand)

1 cup shredded mozzarella cheese

1/2 cup red onion, thinly sliced

1/2 cup corn kernels (fresh, frozen, or canned)

1/4 cup chopped fresh cilantro

1/4 cup sliced jalapeños (optional for heat)

1 tablespoon olive oil

Salt and pepper to taste

Instructions
 

Preheat the Oven: Preheat your oven to 425°F (220°C).

    Prepare the Chicken: In a medium bowl, mix the shredded chicken with 1/4 cup of the BBQ sauce. Mix until the chicken is well coated. Set aside.

      Prepare the Flatbreads: Place the flatbreads on a baking sheet lined with parchment paper or directly on the oven rack for crispy edges.

        Add the Sauce: Spread the remaining 1/4 cup of BBQ sauce evenly over each flatbread, leaving a small border around the edges for a crust.

          Layer the Toppings: Evenly distribute the BBQ chicken on top of the sauces, followed by the shredded mozzarella, red onion slices, corn kernels, and jalapeños if using.

            Season: Drizzle a little olive oil over the top and season with salt and pepper to taste.

              Bake: Bake in the preheated oven for 10-12 minutes or until the cheese is melted and bubbly, and the edges of the flatbread are golden brown.

                Garnish: Once out of the oven, sprinkle chopped fresh cilantro over the top for a fresh flavor burst.

                  Slice & Serve: Allow the pizzas to cool for a couple of minutes, then slice into quarters and serve hot!
