Basil Lime Chicken Skewers

Ingredients
  

1 lb (450g) boneless, skinless chicken breasts, cut into 1-inch pieces

1/4 cup fresh basil leaves, chopped

Zest of 2 limes

1/4 cup lime juice (freshly squeezed)

2 tablespoons honey

3 tablespoons olive oil

3 cloves garlic, minced

1 teaspoon salt

1/2 teaspoon black pepper

1/2 teaspoon crushed red pepper flakes (optional for heat)

Wooden or metal skewers (if using wooden skewers, soak in water for 30 minutes)

Instructions
 

Prepare the Marinade: In a mixing bowl, combine the chopped basil, lime zest, lime juice, honey, olive oil, minced garlic, salt, black pepper, and crushed red pepper flakes (if using). Whisk together until well combined.

    Marinate the Chicken: Add the chicken pieces to the marinade, ensuring each piece is coated well. Cover the bowl and let it marinate in the refrigerator for at least 30 minutes, or up to 2 hours for more flavor.

      Preheat Grill: Preheat your grill to medium-high heat. If using a grill pan, preheat it on the stovetop.

        Skewer the Chicken: Thread the marinated chicken pieces onto the skewers, leaving a little space between pieces for even cooking.

          Grill the Skewers: Place the skewers on the grill and cook for about 4-5 minutes on each side, or until the chicken is cooked through and has nice grill marks. The internal temperature of the chicken should reach 165°F (75°C).

            Serve: Once grilled to perfection, remove the skewers from the grill and let them rest for a couple of minutes. Serve hot with lime wedges and a sprinkle of fresh basil, if desired.
