4 large whole wheat tortillas

2 cups mixed greens (spinach, arugula, kale)

1 cup cherry tomatoes, halved

1 cup cucumber, thinly sliced

1 red bell pepper, thinly sliced

1/2 cup red onion, thinly sliced

1 cup cooked chickpeas (canned or boiled)

1/2 cup feta cheese, crumbled

1/4 cup olives, pitted and sliced (optional)

1/3 cup balsamic vinaigrette (store-bought or homemade)

Salt and pepper to taste

Fresh herbs (basil or parsley) for garnish

Instructions
 

Prep the Wraps: Start by laying out the whole wheat tortillas on a clean surface or cutting board.

    Mix the Filling: In a large mixing bowl, combine the mixed greens, cherry tomatoes, cucumber, red bell pepper, red onion, chickpeas, and olives. Drizzle half of the balsamic vinaigrette over the mixture and toss gently until everything is well coated. Season with salt and pepper to taste.

      Assemble the Wraps: Place about 1/4 of the veggie and chickpea mixture onto the lower third of each tortilla. Sprinkle feta cheese on top, and if desired, add a few fresh herbs for an extra burst of flavor.

        Rolling Technique: Fold in the sides of the tortilla towards the center, covering the filling, then roll from the bottom up to create a tight wrap.
