2 cups ripe tomatoes, diced

1 small cucumber, peeled and diced

1 bell pepper (red or yellow), diced

1/2 red onion, finely chopped

2 cups low-sodium vegetable broth

3 tablespoons balsamic vinegar

3 tablespoons extra virgin olive oil

1 teaspoon Dijon mustard

1 clove garlic, minced

Salt and pepper to taste

Fresh basil leaves for garnish

Optional: 1/4 teaspoon red pepper flakes for a kick

Prepare the Vegetables: In a large bowl, combine the diced tomatoes, cucumber, bell pepper, and red onion. Mix gently and set aside.
