Ingredients

1 French baguette, sliced into 1/2 inch pieces

2 cups fresh strawberries, hulled and quartered

1/4 cup balsamic vinegar

2 tablespoons honey or maple syrup

1 cup ricotta cheese

1/4 cup fresh basil leaves, chopped

Salt and pepper, to taste

Olive oil, for brushing

Optional: balsamic glaze for drizzling

Instructions

Prepare the Strawberries: In a medium bowl, combine the quartered strawberries, balsamic vinegar, honey (or maple syrup), salt, and pepper. Toss gently to coat the strawberries in the mixture. Set aside to marinate for at least 15-20 minutes.

Toast the Baguette: Preheat your oven to 400°F (200°C). Arrange the baguette slices on a baking sheet. Brush each slice lightly with olive oil. Toast in the oven for about 8-10 minutes or until they are golden brown and crisp.

Make the Ricotta Spread: In a small bowl, mix the ricotta cheese with a pinch of salt, pepper, and half of the chopped basil. This adds flavor and a creamy texture to the crostini.

Assemble the Crostini: Once the baguette slices are toasted and slightly cooled, take a spoonful of the ricotta spread and top each crostini with it. Then, add a generous spoonful of the marinated strawberries on top.

Garnish and Serve: Finish each crostini with a sprinkle of the remaining fresh basil and a drizzle of balsamic glaze if desired. Serve immediately for the best texture and flavor.
