Balsamic Grilled Portobello Burgers

4 large portobello mushrooms, stems removed

1/2 cup balsamic vinegar

3 tablespoons olive oil

2 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon salt

1/2 teaspoon black pepper

4 whole wheat burger buns

1 cup fresh spinach or arugula

1 large tomato, sliced

1/2 cup crumbled feta cheese (or goat cheese)

Optional: avocado slices for topping

Marinate the Mushrooms: In a bowl, combine the balsamic vinegar, olive oil, minced garlic, oregano, salt, and black pepper. Whisk together until well blended. Add the portobello mushrooms to the marinade, ensuring they are evenly coated. Let them marinate for at least 30 minutes, flipping occasionally for even flavor absorption.

    Preheat the Grill: Preheat your grill or grill pan over medium heat. You can also use an outdoor grill if available.

      Grill the Mushrooms: Once preheated, place the marinated portobello mushrooms on the grill, gill side down. Grill for about 5-7 minutes, then flip and grill for another 5 minutes, until tender and grill marks appear.

        Toast the Buns: During the last few minutes of grilling, lightly toast the whole wheat burger buns on the grill until golden brown.

          Assemble the Burgers: To assemble, place a grilled portobello mushroom on the bottom half of each toasted bun. Top with a handful of fresh spinach or arugula, a slice of tomato, and a generous sprinkle of feta cheese. Add optional avocado slices for extra creaminess, and finish with the top half of the bun.
