Baked Zucchini Tomato Gratin

2 medium zucchinis, thinly sliced

3 medium ripe tomatoes, thinly sliced

1 large onion, thinly sliced

2 cloves garlic, minced

1 cup grated Parmesan cheese

1 cup panko breadcrumbs

1/2 teaspoon dried basil

1/2 teaspoon dried thyme

1/4 teaspoon red pepper flakes (optional)

2 tablespoons olive oil

Salt and pepper to taste

Fresh basil leaves for garnish

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Vegetables: In a large bowl, combine sliced zucchinis, sliced tomatoes, and sliced onions. Add the minced garlic, olive oil, dried basil, dried thyme, red pepper flakes, salt, and pepper. Toss well to coat the vegetables evenly.

      Layer the Gratin: In a greased 9x13 inch baking dish, layer half of the zucchini mixture at the bottom. Top with half of the sliced tomatoes. Repeat the layers with the remaining zucchini and tomatoes.

        Add Cheese and Breadcrumbs: In a small bowl, mix the grated Parmesan cheese with the panko breadcrumbs. Evenly sprinkle this mixture over the top of the layered vegetables.

          Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes. Then, remove the foil and bake for an additional 15-20 minutes, or until the top is golden brown and crispy.
