Ingredients

2 medium zucchinis, sliced into sticks (about 4 inches long)

1 cup breadcrumbs (preferably panko for extra crunch)

½ cup grated Parmesan cheese

1 teaspoon garlic powder

1 teaspoon paprika

½ teaspoon salt

½ teaspoon black pepper

2 large eggs

½ cup all-purpose flour

Cooking spray or olive oil for drizzling

Instructions

Preheat Oven: Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper for easier cleaning.

Prepare Zucchini: Wash and dry the zucchinis. Cut them into quarter-inch thick sticks, ensuring they are uniform for even cooking.

Set Up Breading Station: In three separate bowls, prepare the breading station:

        - Bowl 1: Place the flour.

          - Bowl 2: Beat the two eggs until well combined.

            - Bowl 3: Combine the breadcrumbs, grated Parmesan, garlic powder, paprika, salt, and black pepper.

              Bread the Zucchini:

                - First, coat each zucchini stick in the flour, shaking off any excess.

                  - Next, dip the floured zucchini in the beaten eggs, ensuring they are well coated.

                    - Finally, roll the zucchini sticks in the breadcrumb mixture, pressing lightly to help the crumbs adhere.

Arrange for Baking: Place the breaded zucchini fries on the prepared baking sheet in a single layer. To achieve additional crispiness, lightly spray or drizzle a small amount of cooking oil over the top of the zucchini fries.

Bake: Bake in the preheated oven for 20-25 minutes, flipping the fries halfway through the cooking time, until they are golden brown and crispy.

Serve: Remove the fries from the oven and let them cool for a couple of minutes. Serve warm with your favorite dipping sauce (like marinara, ranch, or spicy aioli).
