Ingredients

1 cup all-purpose flour

1/2 cup granulated sugar

1/2 cup brown sugar, packed

1 tsp baking powder

1/2 tsp baking soda

1/2 tsp fine sea salt

2 tsp pumpkin pie spice (or a blend of cinnamon, nutmeg, and ginger)

1/2 cup canned pumpkin puree (not pumpkin pie filling)

1/4 cup unsweetened applesauce

1/4 cup vegetable oil (or melted coconut oil)

1 large egg

1 tsp vanilla extract

Optional: 1/4 cup chopped walnuts or pecans for added texture

For the glaze:

1 cup powdered sugar

2 tbsp milk (or milk alternative)

1/2 tsp vanilla extract

Pinch of pumpkin pie spice

Instructions

Preheat the oven to 350°F (175°C). Grease a donut pan with non-stick spray or lightly oil it to prevent sticking.

In a large bowl, whisk together the all-purpose flour, granulated sugar, brown sugar, baking powder, baking soda, sea salt, and pumpkin pie spice until well combined.

In another bowl, mix the canned pumpkin puree, applesauce, vegetable oil, egg, and vanilla extract until smooth.

Combine the wet and dry ingredients by pouring the wet mixture into the dry ingredients. Stir gently until just combined. Be careful not to overmix. If desired, fold in the chopped walnuts or pecans for added crunch.

Spoon or pipe the batter into the prepared donut pan, filling each cavity about halfway full.

Bake in the preheated oven for 10-12 minutes, or until a toothpick inserted into the center comes out clean. The donuts should be lightly golden on the edges.

Let the donuts cool in the pan for about 5 minutes before transferring them to a wire rack to cool completely.

Prepare the glaze by whisking together powdered sugar, milk, vanilla extract, and a sprinkle of pumpkin pie spice in a small bowl until smooth.

Once cooled, dip the tops of the donuts into the glaze, allowing any excess to drip off. Set aside on the rack for a minute to let the glaze set.

Serve and enjoy your delicious Baked Pumpkin Spice Donuts with a cup of coffee or tea for an autumn-inspired treat!
