2 large chicken breasts, cut into 1-inch cubes

½ cup basil pesto (store-bought or homemade)

1 red bell pepper, cut into 1-inch pieces

1 yellow bell pepper, cut into 1-inch pieces

1 zucchini, sliced into thick rounds

1 red onion, cut into wedges

8 cherry tomatoes

2 tablespoons olive oil

Salt and pepper to taste

8 skewers (wooden or metal)

Preheat the Oven: Begin by preheating your oven to 400°F (200°C). If using wooden skewers, soak them in water for at least 30 minutes to prevent burning in the oven.

    Marinate the Chicken: In a medium bowl, combine the cubed chicken breasts with half of the basil pesto. Toss well to ensure the chicken is evenly coated. Let it marinate for at least 15 minutes for the flavors to meld.

      Prepare the Veggies: In a large mixing bowl, combine the bell peppers, zucchini, red onion, and cherry tomatoes. Drizzle with olive oil, and add salt and pepper to taste. Toss until the veggies are well coated.

        Assemble the Skewers: Thread the marinated chicken and assorted veggies onto the skewers, alternating between chicken and vegetables for a colorful presentation. Aim for about 3-4 pieces of chicken and 2-3 pieces of each vegetable per skewer.

          Add Pesto: Once assembled, brush the remaining pesto over the skewered items for extra flavor.

            Bake the Skewers: Place the skewers on a baking sheet lined with parchment paper. Bake in the preheated oven for about 20-25 minutes, or until the chicken is cooked through (internal temperature of 165°F/75°C) and the veggies are tender.

              Serve and Enjoy: Once baked, remove the skewers from the oven and let them cool for a couple of minutes before serving. You can drizzle additional pesto on top if desired. Serve with a side of quinoa, rice, or a fresh salad for a complete meal.
