Baked Feta Potatoes

4 large russet potatoes

200g feta cheese, crumbled

1 cup cherry tomatoes, halved

3 cloves garlic, minced

4 tablespoons olive oil

1 teaspoon dried oregano

Salt and pepper to taste

Fresh basil leaves, for garnish

1 lemon, zested and juiced

Instructions
 

Preheat your oven to 400°F (200°C).

    Scrub the russet potatoes under running water to remove any dirt. Pat them dry with a kitchen towel. Poke several holes with a fork around each potato to allow steam to escape.

      Rub the potatoes with 2 tablespoons of olive oil, and season generously with salt and pepper. Place them directly on the oven rack and bake for about 45-60 minutes, or until tender when pierced with a fork.

        While the potatoes are baking, prepare the feta topping. In a medium mixing bowl, combine the crumbled feta cheese, halved cherry tomatoes, minced garlic, leftover olive oil, dried oregano, lemon zest, and a pinch of salt and pepper. Mix well to combine all the ingredients evenly.

          Once the potatoes are fully baked, remove them from the oven and let them cool for a few minutes.

            Carefully slice each potato lengthwise, creating an open pocket, and gently pinch the ends to fluff the insides.

              Spoon the feta mixture generously into each potato, ensuring an even distribution.

                Return the stuffed potatoes to the oven and bake for an additional 15-20 minutes, or until the feta is heated through and slightly golden.

                  Remove from the oven and drizzle with fresh lemon juice. Garnish with fresh basil leaves before serving.
